Position Title: Culinary Manager

The Culinary Manager is a leadership role responsible for overseeing and ensuring the exceptional performance of all culinary operations at Timber Lake Playhouse, including but not limited to the company cafeteria, lobby concessions, beer garden grill, and special events. The Culinary Manager will report directly to the Executive Director and work closely with the Executive Director and culinary staff to ensure seamless operations while maintaining high standards of food safety, presentation, and hospitality.
Key Responsibilities:
1. Culinary Operations:
● Lead and oversee the preparation, cooking, and presentation of all meals on campus, unless otherwise directed.
● Supervise culinary staff, including chefs, cooks, and prep cooks, ensuring efficient meal preparation and adherence to food safety standards.
● Develop and implement weekly menus that meet all nutritional needs, dietary restrictions/requirements, and preferences of the people being served.
● Monitors food quality and consistency to ensure a high standard of meals is consistently met.
● Oversee the preparation of meals for special events, banquets, and catering services, ensuring they meet both culinary and service expectations.
● Order ingredients and other supplies, manage inventory, and assist with budget management for all culinary operations on campus.
● Ensure the kitchen operates smoothly during peak meal times and special events, adjusting staffing and workflow as needed.
● Ensures appropriate access to meals for all staff despite varying work schedules and meal time availability.
● Responsible for the physical security of all equipment, inventory and facilities under their supervision.
2. Staff Leadership & Development:
● Lead, train, and motivate kitchen teams, fostering a positive, team-oriented work environment.
● Ensure all Kitchen staff are knowledgeable about the facility’s menu, individual diners’ dietary restrictions/requirements, and Illinois Food code (Food Service Sanitation Code).
● Schedule kitchen staff based on operational needs, ensuring adequate coverage during peak times and events.
● Ensure that all staff training and certifications are in place as required by Illinois Food Code and the 2022 FDA Food Code, and keep a log of their expiration dates. Identify which staff must hold a valid Certified Food Protection Manager certificate and which must hold a valid Food Handler certificate.
● Conduct seasonal performance reviews of all staff under their supervision
3. Food Safety & Compliance:
● Ensure strict adherence to Illinois Food code and the 2022 FDA Food Code as they apply to an Illinois Category I Facility
● Conduct regular safety and cleanliness checks to maintain a clean and safe working environment.
● Ensure that the kitchen areas comply with all relevant Illinois Food Code regulations, as well as local health and safety standards.
4. Budget & Inventory Management:
● Monitor and control food and beverage costs, ensuring that inventory levels are appropriately managed to minimize waste and optimize budget.
● Work closely with the Executive Director to maintain budgetary targets, track expenses, and manage food ordering processes.
● Review inventory levels regularly and ensure supplies are adequately stocked.

The General Maintenance Worker is responsible for performing routine building maintenance, cleaning, and groundskeeping to ensure the upkeep and smooth operation of Timber Lake Playhouse’s campus. This position will help prepare spaces for events, ensure cleanliness and functionality, and assist in the overall aesthetic maintenance of the campus.
Primary Responsibilities:
● Routine Building Maintenance: Perform general maintenance tasks, including repairs, inspections, and upkeep of the building to ensure a safe and operational environment.
● Routine Cleaning: Complete regular cleaning tasks for both public and backstage areas, including sweeping, mopping, trash removal, and surface cleaning.

The Custodian is responsible for maintaining the cleanliness and sanitation of Timber Lake Playhouse’s theatre facilities, including public restrooms and other shared spaces. This role helps ensure a clean, safe, and welcoming environment for patrons, artists, and staff throughout the season.
Primary Responsibilities
Routine Cleaning: Clean and maintain designated facility areas including dusting, sweeping, vacuuming, mopping, and restroom sanitation.
Facility Inspections: Perform and document routine inspection and maintenance activities to ensure cleanliness and operational readiness.
Enhanced Cleaning: Carry out deeper cleaning tasks such as scheduled cleaning of the company restroom/bathhouse facility (three times weekly) and the dining facility (once weekly).
Seasonal Preparation: Assist with special projects including cleaning company cabins at the beginning of the season.
Maintenance Reporting: Notify management of any deficiencies, damages, or repair needs observed during routine duties.
Supply Management: Stock and maintain supply rooms and provide supply order needs to the Administrative and Finance Coordinator.
